I am considering the purchase of a full size combi oven for my independent market. Up until now we have used the kitchen of the restaurant next door; but its sale is pending and we will lose access to the kitchen. I hope to shift the food preparation responsibilities into the market and expect to rely heavily on a combi oven to meet the needs of our prepared foods counter and our catering. "I would look at ScanMaster or ISS45 from Retalix/StoreNext sctrictly made for the indpendents. I am not sure what area of the country you are going to be opening in but you can take a look at www.dumac.com if you are opening in the North East."
